Responsibilities and Duties
Creation of newer genre of menu items/ dishes, which would leave a customer 'wow'
Dishes which would have customer acceptance quickly
The Costing of all new dishes in sync with the budgeted food costs
Usage of seasonality of ingredients, to be cost-effective
The new dishes must be executable and scalable by the available skill levels in the kitchens
Making of Recipes for all dishes
Conduct quality checks to ensure adherence to set specifications and following of recipes
Impart training on all the new introductions in the menus across all brands
At least 5 years as Chef l experience with full responsibility of Kitchen Staff, Critical Reporting, and Menu Direction.
Hands on experience in Modern Global and/ or Pan Asian cuisine. Experience with reputed restaurants or hotels with proven kitchen administration skills.
Local market knowledge
Good leadership and communication skills.
Standardizing operations, recipes, cooking practices and training the culinary team on the same.
