Job Description
  • Check the day’s menu and prepare indent in advance and submit to Kitchen Manager for approval. Indent for following day should reach 40 hours in advance to the store for smooth shipment. Example: for Wednesday’s menu indent should read to store on Monday before 16.00 hrs and so on.
  • You will acknowledge receipts of the indents for correct quality and quantity.
  • Plan orders of equipment or ingredients according to identified shortages
  • Arrange for repairs when necessary
  • Ensure that all the ingredients are in place as per the planned menu, liaison with stores for the same.
  • Construct menus with new or existing culinary creations ensuring the variety and quality of the servings
  • Utilise non-moving items in day stores as well as central stores.
  • Maintain high standards of nutrition, sanitation and safety.
  • Take daily rounds of the cold room/meat and chicken to ensure that leftover food is utilised on FIFO basis.
  • Control and direct the food preparation process and any other related activities
  • Avoid over and under production of food
  • Approve and "polish" dishes before they reach the customer
  • Be ready at all times to see that food doesn't run short at counters
  • Ensure that gas is utilised at optimum capacity and no gas is left in cylinders
  • Ensure food ingredients such as bread, pav, egg, and milk are utilised properly
  • You will be responsible for the discipline and performance of all staff placed under you. You must foster a climate of cooperation and respect between co-workers
